Banana Date Oat Muffins from Natural Baby Food - Book Review

Ingredients
  • ½ cup chopped dates (2½ ounces)
  • ⅓ cup hot water
  • ¾ cup all-purpose flour
  • ½ cup white whole wheat flour
  • ¾ cup quick-cooking oats (or old fashioned oats pulsed in food processor until coarsely ground)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1¼ cup mashed, ripe banana (about 3 bananas)
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • ¾ teaspoon vanilla extract
  • ½ cup walnuts, chopped (not in originally recipe)
Instructions
  1. Preheat oven to 375 degrees
  2. Place the dates and hot water in a bowl and let them soak for 10 minutes. Puree in a mini-food processor until a smooth paste forms.
  3. Whisk both types of flour, oats, baking powder, baking soda, salt, and cinnamon together in a large bowl.
  4. Mix the date paste, bananas, egg, milk, oil, and vanilla together in a another bowl. Add the dry ingredients to the bowl and stir everything together until just combined. Fold in chopped walnuts, if using.
  5. Spray a 24 cup mini muffin tin with cooking spray and spoon batter into wells. Bake in the oven for 12 minutes or until a toothpick inserted into the center comes out clean. Cool muffins on wire rack for 10 minutes before removing and serving.
