Banana Date Oat Muffins from Natural Baby Food - Book Review

Ingredients
½ cup chopped dates (2½ ounces)
⅓ cup hot water
¾ cup all-purpose flour
½ cup white whole wheat flour
¾ cup quick-cooking oats (or old fashioned oats pulsed in food processor until coarsely ground)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1¼ cup mashed, ripe banana (about 3 bananas)
1 large egg
½ cup milk
¼ cup vegetable oil
¾ teaspoon vanilla extract
½ cup walnuts, chopped (not in originally recipe)
Instructions
Preheat oven to 375 degrees
Place the dates and hot water in a bowl and let them soak for 10 minutes. Puree in a mini-food processor until a smooth paste forms.
Whisk both types of flour, oats, baking powder, baking soda, salt, and cinnamon together in a large bowl.
Mix the date paste, bananas, egg, milk, oil, and vanilla together in a another bowl. Add the dry ingredients to the bowl and stir everything together until just combined. Fold in chopped walnuts, if using.
Spray a 24 cup mini muffin tin with cooking spray and spoon batter into wells. Bake in the oven for 12 minutes or until a toothpick inserted into the center comes out clean. Cool muffins on wire rack for 10 minutes before removing and serving.
