Homemade Granola Bars

Ingredients
  • 1 cup rolled old fashioned oats
  • ½ cup toasted oat cereal ( I used originial Cherrios)
  • ½ teaspoon cinnamon
  • ¼ cup unsalted walnuts, roughly chopped
  • 1 tablespoon butter
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ teaspoon salt
  • ½ cup dates, finely chopped
  • ½ cup dried fruit ( I used raisins and craisins)
Instructions
  1. Preheat oven to 300 degrees. Spray 9x9 inch baking pan with nonstick cooking spray, then line with parchment paper.
  2. In a large bowl, combine oats, cherrios, nuts and cinnamon.
  3. In a microwave safe bowl add butter and microwave for 20-30 seconds until melted. Add in peanut butter and honey and mix to combine. Add salt, dates and dried fruit to wet mixture and mix to combine. Pour over oat mixture. Stir until everything is evenly coated.
  4. Pour oat mixture into prepared pan and spread evenly across the bottom. Using a piece of foil or parchment paper, cover granola bars and push down evenly on top to compress the mixture. Remove foil or paper and then place bars in the oven.
  5. Cook for 15 minutes. Remove pan from oven and set on rack to cool. Once cooled, transfer pan to fridge and chill for 2 hours. Remove bars from pan using the parchment paper. Cut into 14 individual bars.
