Hi Friends! I am excited to be sharing with you all a cookbook recently released by two fellow dietitians and food bloggers Liz Shaw and Sarah Hass. Both women are passionate about nourishing your body to improve health and fertility and both share their experience with infertility in their newest book Fertility Foods Cookbook.  This wonderful resource is perfect for any mom-to-be or mom who is looking to improve their fertility or health through food and nutrition.  The book provides a great overview of nutrients important to help boost fertility and prepare you for pregnancy as well as over 100 easy recipes you can make at home. I also love that they touch on the fact that fertility is more than just food other factors like movement, sleep and self care can also help improve your fertility.

Getting pregnant and becoming a mother can be stressful and knowing what is best for you  can be down right confusing. This book is reliable resource that can help take the stress out of knowing what what to eat! Even if you’re not a mom this book provides helpful nutrition advise for just about anyone and recipes that the whole family will love.

Homemade Granola Bars

Over the past couple of weeks I’ve been trying out some of the recipes with the family and so far I have been loving them all! For dinner I made their Red Lentil Curry Soup and had my son help me make their Nutrageous Energy Bites and these Homemade Granola Bars to have on hand for snacks. What was great about all of these recipes was that they used a lot of pantry staples so I had the ingredients on hand. The energy bites and granola bars also can easily be adjusted based on what nuts, cereals or dried fruit you have in the house. I adjusted the Homemade Granola Bars slightly incorporating some toasted oat cereal, cinnamon and different nuts and dried fruit.

Ingredients
  • 1 cup rolled old fashioned oats
  • ½ cup toasted oat cereal ( I used originial Cherrios)
  • ½ teaspoon cinnamon
  • ¼ cup unsalted walnuts, roughly chopped
  • 1 tablespoon butter
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ teaspoon salt
  • ½ cup dates, finely chopped
  • ½ cup dried fruit ( I used raisins and craisins)
Instructions
  1. Preheat oven to 300 degrees. Spray 9x9 inch baking pan with nonstick cooking spray, then line with parchment paper.
  2. In a large bowl, combine oats, cherrios, nuts and cinnamon.
  3. In a microwave safe bowl add butter and microwave for 20-30 seconds until melted. Add in peanut butter and honey and mix to combine. Add salt, dates and dried fruit to wet mixture and mix to combine. Pour over oat mixture. Stir until everything is evenly coated.
  4. Pour oat mixture into prepared pan and spread evenly across the bottom. Using a piece of foil or parchment paper, cover granola bars and push down evenly on top to compress the mixture. Remove foil or paper and then place bars in the oven.
  5. Cook for 15 minutes. Remove pan from oven and set on rack to cool. Once cooled, transfer pan to fridge and chill for 2 hours. Remove bars from pan using the parchment paper. Cut into 14 individual bars.
