I want to first say sorry for lack of posts recently. Life has just been crazy these past few weeks. From seeing clients, teaching cooking classes,  finishing up my Masters degree, to having some fun and going to a few holiday social events. Oh yea and raising a toddler! It’s all been a bit insane. Not really sure how things are getting done other than I haven’t been spending much time on recipe development or blog posts.
Before the year is up I did want to share one holiday inspired recipe. One that I shared a few years ago but needed some tweeks and new photos. My mimi’s hermit recipe…Spicy Hermit Cookies

Hermits  are one of those special foods that brings back so many memories. My Mimi is very well known for her hermits and even sent me her recipe calling it “Marge’e (aka Mimi) Prize Winning Hermits” and there is no doubt that they could win just about any cooking prize! She makes them for Christmas, Thanksgiving, family birthday parties, summer vacation. You name it, just about any family event there is bound to be some of Mimi’s hermits on the dessert table. So to celebrate the season I have decided to share her recipe with a couple changes to make it my own, but honestly I have to give her all of the credit!  
These cookies are just one of those feel good foods! If I can give you any advice this holiday season, it would be to enjoy foods that bring back those happy memories and happy emotions.  Oh and spend a little time on self care! Go to a gym class you enjoy, eat a cookie you love,  get a message or see a movie. Because this time of year can get a bit stressful but saving some time for yourself can really help.

Mimi's Spicy Hermit Cookies

Ingredients
  • ½ cup usalted butter
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • 1½ cups all-purpose flour
  • ¾ cup whole wheat flour
  • ¼ teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cloves
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ cup raisins
  • ¼ cup dried cranberries
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large standing mixer, blend butter, sugars, egg and molasses.
  3. Sift together the dry ingredients and add gradually to wet mixture, blending well.
  4. Fold in raisins and craisins with a spatula or on a low mixer setting.
  5. Spread dough in two equal rolls onto a 15-17x10 jellyroll pan covered with silpat or parchment paper. Shape rows to an even thickness, leaving space for spreading between rows and on sides and ends. The thickness of the dough should be about the depth of the side of the pan.
  6. Bake at 375 degrees for 14 to 15 minutes. Dough should be set with cracks still looking moist. Let cool for 10 minutes then score for size of hermit and then cool for another 10 minutes before removing from pan.
