I mean look at those little pancakes…GET IN MY BELLY!

I am a big pancake for breakfast fan, but not a huge fan of pancakes from scratch when I need a quick breakfast in the morning. Since discovering that eggs+banana+oats make a great pancake I have been making more pancakes for breakfast in the morning to share with the little guy.  

I recently discovered that Matcha, an antioxidant packed green tea powder, is a perfect addition to these pancakes. It adds a great flavor and is an easy way to get in some antioxidants in the morning. These Matcha pancakes also make for a great snack or dessert!

4-Ingredient Matcha Pancakes

I topped my matcha pancakes with some vanilla yogurt, fresh berries and maple syrup. Feel free to make them your own and top them however you like!

Some of you may be wondering..

Is Matcha ok for my child to eat?

The answer is: we don’t know.

There is no research currently available on this topic. The area of concern is around the caffeine content. The amount of caffeine ( about 60- mg per 1 teaspoon) versus about 95mg per 1 cup coffee.  Some children may not be impacted by this while others may. Matcha does contain antioxidants, vitamins and fiber all of which could provide health promoting qualities for your child. So potentially could provide a health benefit. In conclusion, it’s up to you if you decide to serve these to your children or keep them to yourself!

4-Ingredient Matcha Pancakes

Easy antioxidant packed pancake recipe. Great for breakfast or just snacking on!

Equipment

  • Blender
  • non-stick skillet

Ingredients

  • 1 banana
  • 1/3 cup old fashioned oats
  • 2 eggs
  • 1 teaspoon matcha powder

Instructions

  • Add all ingredients into a blender or food processor. Pulse until combined.
  • Using a non-stick skillet on medium high heat, scoop out 1/4 cup of batter for each pancake. You should be able to make about 4 pancakes in total. Cook on each side for 2-3 minutes or until the batter on top starts to bubble. Flip over and cook for another 1-2 minutes or until golden brown.
  • Serve with toppings as desired ( yogurt, maple syrup, berries)
