I have been on the search for the perfect breakfast on the go for some time now and think I have found a winner, overnight oats. Lets just say whoever came up with the idea for Overnight Oats was genius.  If you’re like me, and like to wake up at the very last moment before heading out the door for work, this recipe is for you!  All you need is three ingredients; oats, dairy or dairy substitute and fruit plus three minutes of time for the perfect balanced breakfast. Now that the warmer weather is here, this recipe is perfect because it requires no cooking and can be enjoyed cold.

Cherry Almond Over Night Oats with Almond Breeze

I usually mix the oats with milk or yogurt and any fruit that I have. This past week I tried it with Blue Diamonds Original Almond Milk instead and it was just as delicious! I enjoyed the nuttier flavor that the almond milk gave to the oatmeal. For some natural sweetness I added in some fresh cherries and for more protein and crunch I added in slivered almonds.  I also used chia seeds to add in healthy omega-3 fatty acids and fiber. It is optional, but highly recommended for an added nutrition boost to your morning!

I made enough for one serving, but you could easily double up the recipe and make enough for two servings. I stored the Cherry Almond Overnight Oats in a Mason jar, which made it portable and easy to pack in my purse on the way out the door!

Ingredients
  • ½ cup old fashioned oats
  • 1 teaspoon chia seeds
  • 1 cup Blue Diamond Almond Breeze Original
  • ½ cup cherries, pitted and cut in half
  • 2 tablespoons slivered almonds
  • 1 teaspoon honey ( optional)
Instructions
  1. Add oats, chia seeds and almond milk mix together.
  2. Add in cherries and slivered almonds. Mix to combine.
  3. Store in a airtight container in the refrigerator for at least 6-8 hours.
  4. Remove from fridge and top with honey and enjoy!
