Hope you all are enjoying this summer as much as we are! The past week has been straight up hot. Think 90+ for almost a week straight. Don’t get me wrong I am not complaining but the last thing I have wanted to do is put on my oven or stove. So there comes a great excuse to pull out my Instant Pot for a dinner that won’t heat up the house and is quick, easy and of course delicious!

I served it up on top of some buns with my favorite Trader Joe’s sauerkraut and pickles. You could also eat it plain with some roasted or grilled potatoes or corn and veggies on the side. Easy Instant Pot BBQ Pulled Chicken

Ingredients
  • 1 tablespoon olive oil
  • 1 medium yellow onion, sliced
  • 1.5 pounds chicken
  • ¾ cup BBQ Sauce
  • ¼ cup Italian dressing
Instructions
  1. Set the instant pot to saute. Add in olive oil and sliced onions, cook for 3 minutes or until onions are tender and translucent.
  2. Top onions with chicken.
  3. In a small bowl mix together BBQ sauce and Italian dressing, then pour over chicken.
  4. Put on the top of the instant pot and set to sealed. Set to manual high for 20 minutes. When done cooking do a quick release. Remove chicken and shredded with a fork then place back in the pot. The sauce should thicken as it cools. If you prefer a thicker sauce, while you are shredding the chicken set the instant pot to saute for 3-4 minutes to let some liquid evaporate.
  5. Serve on a bun topped with sauerkraut and pickles.
Notes
If you want to make the recipe in a slow cooker. You do not need to saute the onions just add to the pot topped with chicken then add ½ cup of water to the BBQ sauce and Italian dressing. Set slow cooker to low for 6 hours or high for 3 hours.
