Key Lime Pie Parfaits

These Key Lime Pie Parfaits are spoon licking good and are made with simple ingredients including avocados and Siggi’s Whole Milk Skyr yogurt.Key Lime Pie I first came up with this recipe when I was creating a recipe for another food blog I maintain for work. All the recipes are low in carbohydrates and are catered to people following a low glycemic diet for seizure control. I usually don’t share those recipes on this blog but I loved this one so much I had to! I made a few substitutions from the original recipe like using honey instead of sugar substitute but overall they both taste delicious.

Key lime pie has to be one of my favorite desserts. The refreshing tart flavor has me coming back for more and more! For a healthy spin on my favorite dessert I used avocado and Siggi’s new whole milk Skyr as a base for the filling along with lime juice, lime zest and sweetener. The filling by itself is divine!  The avocado and yogurt give the filling its green color and creamy texture while the lime juice and zest bring in the tart flavor. These three ingredients along with some sweetness from honey work together to create a filling that tastes just like the key lime pie filling I know and love!

For some crunch I mixed together almond flour, coconut flakes, coconut oil and coconut sugar. I then toasted the mixture to bring out all the wonderful flavors.

These Key Lime Pie Parfaits are healthy enough for breakfast but decadent enough for dessert.Key Lime Pie

Ingredients
  • 1 avocado, pitted and flesh removed
  • 1, 5 ounce whole milk Siggi's Skyr
  • 3 tablespoons lime juice ( about 1½ limes)
  • 1 teaspoon lime zest
  • 3 tablespoons honey
  • ¼ cup almond flour
  • ⅛ cut unsweetened coconut flakes
  • 1 teaspoon coconut oil
  • 2 teaspoons coconut sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. In a small bowl mix together almond floud, coconut flakes, coconut oil. Spread out on small baking sheet. Bake for 7 minutes or until toasted.
  3. While crumble is baking prepare the filling. In a food processor add avocado, Siggis Skyr, lime juice, lime zest and honey. Process until smooth and creamy.
  4. To assemble place ⅙ of the mixture in 3 small dishes, layer with the crumble, layer the remaining filling evenly in each dish then top with remaining crumble. Top with whipped cream and sprinkle with lime zest.
