I’m always on the look out for new cookie recipes that are healthy and delicious that I can make with my kids. Who knew chickpeas would be the perfect based for a chocolate chip cookie?! And if you have a bunch of cans of chickpeas in your pantry right now this might be the perfect way to use them.

When I first tested these cookies my husbands first response was…. What’s in those cookies? They are amazing! He was surprised they were made with beans, but also impressed at how good they turned out. My son was also a big fan, I mean anything with chocolate is a big hit with him 😉

Chickpeas make these cookies super soft and melt in your mouth good. I tested them again with white beans, just to see, and they also came out really good. But chickpeas were the winner!Peanut Butter Chickpea Cookies with Chocolate Chunks

What you need for these Peanut Butter Chickpea Cookies with Chocolate Chunks

  • 1 can of chickpeas, drained
  • peanut butter ( can substitute, almond butter/cashew butter/ sesame seed butter)
  • honey ( can use maple syrup, if vegan or that’s what you have!)
  • baking soda
  • baking powder
  • salt
  • vanilla
  • chocolate chunks ( chocolate chips or even raisins work as well)

How can my kids help cook these Peanut Butter Chickpea Cookies with Chocolate Chunks?

  • Drain and wash chickpeas
  • Measure out and add ingredients into a blender or food processor (wait for the chocolate chunks until the end).
  • Blend the mixture together
  • Add and mix in the chocolate chunks.
  • Scoop the batter out onto a baking sheet.
  • Sprinkle the top of each cookies with remaining chocolate chunks.

Substitutions and Adjustment Ideas

  • Don’t have chickpeas?I tried white cannelloni beans and they came out just as good. I bet black beans would work great too!
  • Make them chocolate cookies. Just add in a tablespoon of cocoa powder.
  • Make it into a dip. Since there is no flour or eggs in the recipe, you can easily omit the baking powder and baking soda and not cook the mixture and boom its a dip. The batter is delicious and would be great for dipping pretzels or fruit for an afternoon snack.
  • Need a peanut butter substitute? use any other for other nut or seed butter
  • Make it vegan by using maple syrup instead of honey.
  • Don’t have chocolate chunks? You can use chocolate chips or raisins instead

Peanut Butter Chickpea Cookies with Chocolate Chunks

Equipment

  • food processor OR blender

Ingredients

  • 1 (14.5 ounce) can chickpeas drained
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup dark chocolate chunks

Instructions

  • Preheat oven to 350 degrees. Line baking sheet with parchment paper or silpat mat.
  • Add all ingredients, except chocolate, to a food processor or blender. Blend until smooth.
  • Add in about 2/3 of the chocolate chunks and mix to combine.
  • Using a cookie scoop. Scoop batter out into 12 equal scoops.
  • Top each with remaining chocolate chunks.
  • Bake for 12 minutes. Will still be soft but golden brown on the outside. Remove and let cool on baking sheet for 5 minutes. Then place on cooling rack to completely cool. Or enjoy hot!
  • Place cooled cookies in an airtight container. Will last 2 days on the counter, 7 days in the fridge or 3 months in the freezer.

Notes

Want to make these vegan? Use maple syrup instead of honey.
Don't have peanut butter? Try almond butter, cashew butter or sesame seed butter instead.
You can also replace chocolate chunks with chocolate chips or raisins instead.
