Happy March 21st! Not only does this mean it’s Recipe Redux day, but this is probably the last Recipe Redux before baby S arrives. Wow how time has flown! This month’s theme”7-Ingredients (or Less) Recipes” couldn’t have come at a more perfect time. I have been trying to come up with quick meal ideas for when the baby arrives. One of my go-to staples recently is salmon. Not only is it packed with DHA, an omega-3 fatty acid that is vital for babies’ brain development, but it is fairly easy to prepare. This time of year I love pairing salmon with asparagus and any starch I have to use up. This week it was sweet potatoes, another nutrient rich food that is great for you to eat anytime but especially while pregnant.
To make clean up a breeze, I decided to make this dish in one pan. I figure I’ll be doing enough laundry and diaper changing, dishes won’t be something I need to add to the list! Simply bake sweet potatoes for 20 minutes, then move to one side and add on asparagus and salmon.Bake for another 10 minutes and you have dinner ready for the whole family!This dish can also be made ahead of time or eaten again the next night for left overs. Just store in airtight container and enjoy within 3-4 days.
