My One-Pan Salmon, Asparagus and Sweet Potatoes meal call for only four main ingredients, one cooking pan and 30 minutes of cooking time. Perfect for anyone looking for a quick and easy weeknight meal!

Happy March 21st! Not only does this mean it’s Recipe Redux day, but this is probably the last Recipe Redux before baby S arrives. Wow how time has flown!  This month’s theme”7-Ingredients (or Less) Recipes” couldn’t have come at a more perfect time. I have been trying to come up with quick meal ideas for when the baby arrives. One of my go-to staples recently is salmon. Not only is it packed with DHA, an omega-3 fatty acid that is vital for babies’ brain development, but it is fairly easy to prepare. This time of year I love pairing salmon with asparagus and any starch I have to use up. This week it was sweet potatoes, another nutrient rich food that is great for you to eat anytime but especially while pregnant.

To make clean up a breeze, I decided to make this dish in one pan. I figure I’ll be doing enough laundry and diaper changing, dishes won’t be something I need to add to the list! My One-Pan Salmon Asparagus and Sweet Potato meal calls for a grand total of 4 main ingredients, one pan, and 30 minutes of cooking time. I call that a success!

Simply bake sweet potatoes for 20 minutes, then move to one side and add on asparagus and salmon.One Pan SalmonBake for another 10 minutes and you have dinner ready for the whole family!One Pan SalmonThis dish can also be made ahead of time or eaten again the next night for left overs. Just store in airtight container and enjoy within 3-4 days.

Ingredients
  • 1 pound salmon, cut into 4 pieces
  • 1 bunch asparagus, woody ends removed
  • 2 medium sweet potatoes, cut into sticks
  • 1 lemon, cut into thin slices
  • 1-2 tablespoons olive oil
  • salt/pepper to taste
Instructions
  1. Preheat oven to 425 degrees.
  2. Line baking sheet with aluminum foil.
  3. Toss cut sweet potato sticks with 1 tablespoon of olive oil and salt/pepper to taste. Line evenly on baking sheet. Bake for 20 minutes.
  4. While sweet potato is cooking prepare asparagus by tossing in 2 teaspoons of olive oil and salt/pepper to taste. Then drizzle remaining olive oil over salmon filets, sprinkle with salt/pepper and top with two slices of lemon.
  5. When sweet potatoes are done baking, move to one side. Line asparagus in an even layer over the bottom of the baking sheet then top with salmon filets. Bake for 10 minutes or until salmon opaque and flakey.
