Breton’s Artisanal Sweet Potato and Ancient Grains cracker’s tender crisp texture and delicious taste is made with ancient grains like quinoa and rye, with sweet potato pieces baked right in. They make a perfect appetizer cracker for just about any occasion.

I’ve created the perfect appetizer for you to share at any of your upcoming summer festivities! With grilled zucchini, dill goat cheese and smoked salmon you have a flavor packed appetizer that’s almost filling enough for a meal in it self! I love how the sweetness from the sweet potato in the cracker pairs with the salty smoked salmon and goat cheese. The dill adds a pop of flavor and freshness and the zucchini adds in great color and another texture to round out this delicious bite.

This recipe is great because it only calls for a total of 5 ingredients and takes under 20 minutes to cook and prepare. If you are planning on making this recipe to bring to an event I recommend prepping the ingredients ahead of time then assembling right before you serve it. Not sure all of your guest would like smoked salmon? You could create your own cracker bar with the crackers, dill goat cheese, grilled zucchini slices,  and smoked salmon. For the little guy I topped the sweet potato crackers with the dill goat cheese and diced up the zucchini on the side. He’s not a huge fan of salmon (yet) and smoked salmon is a bit too salty for infants and young toddlers. It was the first time he tried goat cheese and he wasn’t too sure about it at first, but ended up eating it all!

These crackers make a great summer time appetizer or quick snack!
Ingredients
  • 1 medium zucchini, sliced
  • ½ package of Breton Artisanal Sweet Potato and Ancient Grain Crackers
  • 4 ounces goat cheese
  • 2 teaspoons dried dill, divided
  • 4 ounces smoked salmon
Instructions
  1. On a grill or griddle pan on medium heat. Lay sliced zucchini flat on one side. Cook for 2-3 minutes, or until golden brown, flip and cook for another 2-3 minutes.
  2. In a small bowl add goat cheese and 1 teaspoon of dried dill. Mix to combine.
  3. Remove smoked salmon from package and even sprinkle one side with remaining 1 teaspoon of dried dill,
  4. When ready to serve. First spread crackers with ~ ½ tablespoon of dill goat cheese, one slice of grilled zucchini, piece of smoked salmon.
  5. Serve immediately
Notes
The ingredients can be prepared ahead of time. But assemble just before serving for the best experience!
