Ingredients
1tablespoonsesame Oil
1tablespoonfreshly grated ginger
4clovesgarlicminced
16ouncesmushrooms
3tablespoonssoy saucelow sodium
1-2tablespoonsSriracha Hot Chili Sauce(optional)
4cupslow sodium chicken broth(can use vegetable broth if making vegetarian/vegan version)
2cupswater
12ouncessoba noodles
4cupsraw spinach
TOPPINGS
12ouncesshredded chickenabout 1.5 cups
2largehard boiled eggscut in half lengthwise
1cupcabbageshredded
1bunchgreen onionsdiced
Instructions
In a large soup pot on medium heat add sesame oil. Add in ginger and garlic and saute for 1-2 minutes until fragrant. Add in mushrooms and cook for another 1-2 minutes. Add in soy sauce and sriracha and mix to combine.
Add in chicken stock and water. Bring to a boil. Add in soba noodle and cook for 3-4 minutes to soften. Add in spinach and mix until wilted.
To serve. Ladle into bowls and top each with ½ hard boiled egg, 3 ounces shredded chicken, red cabbage and green onions.
