Add flour, salt, cinnamon to a large bowl. Mix with wooden spoon to combine. Add in water and mix with wooden spoon, use hands at the end to completely combine. Add extra 1/2-1 tablespoon water if dough is too dry. Dough should be slightly damp/wet but not too sticky when done.
Place dough in between two pieces of parchment paper. Use a rolling pin to roll dough into 1/4 inch circle. The more even the better.*If doing with multiple kids can divide dough into smaller amounts to share.
Remove top parchment paper. Using favorite cookie cutters cut out shapes and then place cut pieces on baking sheet lined with parchment paper or a silpat mat. Leftover dough can be re-rolled to make more ornaments.
Bake in preheated oven for 2-3 hours. Ornaments are done with dry and no longer looking wet. *Note: ornaments may puff up slightly during cooking this is ok!
