Spicy Ramen with Soba Noodles

Over the past year or two my hubby and I have really gotten into Ramen. Now this isn’t the dry noodles in the bag Ramen, this is the kind of Ramen you get at a Japanese restaurant. Typical Ramen is made by cooking chicken or pork bones with salt for many hours then served with noodles, meat and some vegetables. Our obsession with Ramen got me to try and come up with a healthier and easier version that we could make and enjoy at home.

My Spicy Ramen Soup with Soba Noodles is just that, a healthy soup you can enjoy all year long! To cut back on the sodium while maintaining the flavor of the broth I used low sodium chicken broth and added in Kikkoman Soy Sauce instead of salt. Did you know by using 1/2 teaspoon of Kikkoman Sauce in place of 1/2 teaspoon of table salt, the sodium content of the recipe is cut by 1000mg! You can even purchase Kikkoman’s Less Sodium Soy Sauce,  50% Less Sodium Gluten-Free Tamari Soy Sauce, Less Sodium Teriyaki Marinade & Sauce, and 50% Less Sodium Gluten-Free Teriyaki Marinade & Sauce. I also added in some Kikkoman Sriracha Hot Chili Sauce for some heat.

To bump up the nutrition I used Soba noodles instead of the traditional Ramen Noodles. Soba noodles are made from wheat flour and buckwheat flour, both of which are whole grains and provide a good source of fiber and some protein. I also added in a variety of vegetables including mushrooms, spinach, red cabbage and green onions for more fiber and nutrients! I just love the variety of colors and textures that the different vegetables add to the soup

This Spicy Ramen Soup with Soba Noodles is a quick weeknight dinner, taking under 30 minutes to prepare and cook and is bursting with flavor and nutrition. And you can even get your kids involved in this recipe as well!

How Your Kids Can Help Make this Ramen with Soba Noodles

  • dice mushroom
  • grate ginger
  • mince garlic
  • measure out: sesame oil, soy sauce, chili sauce (can be omitted if you prefer less spicy), chicken/vegetable broth, water
  • add above ingredients to pot
  • stir ingredients in pot ( with adult supervision)
  • add in noodles, spinach to soup
  • prepare toppings: shred chicken with a fork, shred cabbage with a grater (unless you buy it already shredded), dice green onions (try using kitchen shears)

Ingredients

  • 1 tablespoon sesame Oil
  • 1 tablespoon freshly grated ginger
  • 4 cloves garlic minced
  • 16 ounces mushrooms
  • 3 tablespoons soy sauce low sodium
  • 1-2 tablespoons Sriracha Hot Chili Sauce (optional)
  • 4 cups low sodium chicken broth (can use vegetable broth if making vegetarian/vegan version)
  • 2 cups water
  • 12 ounces soba noodles
  • 4 cups raw spinach

TOPPINGS

  • 12 ounces shredded chicken about 1.5 cups
  • 2 large hard boiled eggs cut in half lengthwise
  • 1 cup cabbage shredded
  • 1 bunch green onions diced

Instructions

  • In a large soup pot on medium heat add sesame oil. Add in ginger and garlic and saute for 1-2 minutes until fragrant. Add in mushrooms and cook for another 1-2 minutes. Add in soy sauce and sriracha and mix to combine.
  • Add in chicken stock and water. Bring to a boil. Add in soba noodle and cook for 3-4 minutes to soften. Add in spinach and mix until wilted.
  • To serve. Ladle into bowls and top each with ½ hard boiled egg, 3 ounces shredded chicken, red cabbage and green onions.
