A lot has happened since I last posted which was, oh my, two months ago! On April 10th I became a mom! Yes, that’s right, our son Nasan has been taking up a lot of my time recently but we’ve been enjoying every minute of it. I mean how can you not love that face  😀

It has been a crazy but wonderful six weeks since his arrival but I haven’t been doing too much cooking.  As much as I have been grateful for all the meals we had made for us by family and friends I have been itching to get back into the kitchen! And this week I finally did. All for this month’s recipe redux theme “Small Plates for Sunny Days”. Small plates and finger foods are my go to these days. Anything I can eat in one hand while nursing or holding a baby is good by me!

These Fruit and Granola Tartlets make for a perfect healthy summer treat that can easily eaten in one hand! The crust, made with oats and walnuts, has a nice nutty crunch while the filling, made with siggi’s yogurt, milk and chia seeds, is thick and creamy.  These tartlets are filled with fiber, protein and heart healthy omega-3 fatty acids making them perfect for a snack or even breakfast.  I have been enjoying them just about anytime of day and expect they will be a reoccurring treat in our house this summer!

 Fruit Tarlet

Ingredients
  • Filling
  • 1 cup siggis vanilla yogurt
  • ½ cup low fat milk
  • ¼ cup chia seeds
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • pinch of salt
  • Granola Cups
  • 1½ cups old fashioned oats
  • 1 cup walnuts, finely chopped
  • ⅓ cup coconut oil (or vegetable oil)
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • Topping
  • 1 cup fresh mixed berries
Instructions
  1. For the filling. In a medium mixing bowl add all ingredients and mix until well combined. Cover and place in fridge overnight.
  2. For the granola crust. Pre-heat oven to 325 degrees. Spray muffin tin with cooking spray or fill muffin tin with paper liners and spray with cooking spray (to prevent sticking). In a large mixing bowl add all ingredients and mix to combine. Evenly fill all muffin tin with granola mixture and press mixture to fill cup. Cook for 17 minutes.Remove and let cool completely.
  3. To create tartlets fill each cooked granola crust with filling and top with fresh fruit. Best if filled prior to eating.
