 In celebration of spring, although it has yet to feel like spring yet, and my birthday month I am sharing one of my new favorite snacks and breakfast additions, these Healthy Carrot Cake Bars. As a kid one of my favorite desserts and birthday cakes had to be Carrot Cake. Mainly for the delicious cream cheese frosting but also because the cake was always so moist and flavorful. I basically just wanted an excuse to enjoy my favorite dessert all month long!Healthy Carrot Cake Bars

I also needed an activity for my little guy to help with as cabin fever as it was at an all time high this past week. With temperatures barley reaching 40 degrees and rain/snow every other day. Going outside for longer than 20 minutes is just not happening and you can only go to the library so much! So baking it is. I took one of my favorite recipes for these Blender Peanut Butter Banana Oatmeal Bars and swapped a few ingredients to make it into carrot cake!

I love blender bar recipes because they are great for getting your toddler or child practicing how to pour and measure  ingredients. Feel free to use either a  blender or Food Processor to blend the ingredients together. They also are great for getting your kids to try new mix-in ingredients. For example, shredded carrots and raisins in this recipe!

How your Kids Can Help Baking these Carrot Cake Bars

  • measure out dry and wet ingredients
  • shred carrots using a grater or food processor (with grater attachment)
  • peel bananas
  • crack egg
  • add ingredients to food processor/blender
  • blend ingredients together
  • fold in carrots, raisins
  • pour batter into baking dish

This recipe is also great meal prep recipe. Make a batch on the weekend and you will have part of breakfast or an easy on-the-go snack ready to go.

Equipment

  • food processor
  • 8x8 baking dish

Ingredients

  • 2 cups old fashioned (or instant) oats
  • 2 bananas peeled
  • 1/3 cup coconut oil
  • 1 egg
  • 1/3 cup almond coconut milk ( regular milk or coconut milk would also work)
  • 1/4 cup maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded carrots
  • 1/2 cup raisins

Instructions

  • Preheat oven to 350 degrees. Spray an 8x8 baking dish with cooking spray.
  • To a blender or food processor add oats, bananas, cinnamon, baking powder, salt, maple syrup, egg, coconut oil, and almond coconut milk. Blend until smooth.
  • Add raisins and shredded carrots and fold to combine.
  • Add mixture to baking dish.
  • Bake in preheated oven for 30 minutes, or until inserted toothpick comes out clean.
  • Let cool slightly and enjoy or cover with a tight fitting lid and store in the fridge. Enjoy within 5-7 days.
