1/3cupalmond coconut milk ( regular milk or coconut milk would also work)
1/4cupmaple syrup
2teaspoonscinnamon
1teaspoonbaking powder
1/2teaspoonsalt
1cupshredded carrots
1/2cupraisins
Instructions
Preheat oven to 350 degrees. Spray an 8x8 baking dish with cooking spray.
To a blender or food processor add oats, bananas, cinnamon, baking powder, salt, maple syrup, egg, coconut oil, and almond coconut milk. Blend until smooth.
Add raisins and shredded carrots and fold to combine.
Add mixture to baking dish.
Bake in preheated oven for 30 minutes, or until inserted toothpick comes out clean.
Let cool slightly and enjoy or cover with a tight fitting lid and store in the fridge. Enjoy within 5-7 days.
