Cinnamon Sweet Potato Bites

These Cinnamon Sweet Potato Bites are the perfect addition to breakfast or snack and are kid-friendly! Especially for a new or busy mom!
Cinnamon Sweet Potato Bites

The count down to baby #2 is on (~5 weeks !) and I am currently in meal prep mode. I remember when I had my son that the last thing I wanted to do for the first month was cook. I also was also breast feeding and always hungry and needed something I could eat with one hand. Needless to say, I have been putting together a few recipes that will fit the bill, like these Cinnamon Sweet Potato Bites.

For some added sweetness, flavor and texture I topped the Cinnamon Sweet Potato Bites with raisins and craisins, but you could easily omit them or add in other dried fruit or chocolate chips. I made a batch last week and froze half to have when baby arrives and have been enjoying the other half with my son for snacks or to add with meals. The base of the bites are sweet potato, oats, whole wheat flour and flax seed. I always get a bit nervous when I make whole grain muffins that they will be too dry or “earthy” but these are far from it! What I think helps is the sweetness and moisture from both the sweet potato and yogurt. I have to say yogurt is definitely the secret to a moist muffin or baked good!Cinnamon Sweet Potato Bites

As far as my son, he is also a big fan. He is actually not a big “sweet bread” kid, he will take a bite or two of a muffin or baked good and then move on to something else.  But with these Cinnamon Sweet Potato Bites he has been devouring them! It may also be that I added in raisins and craisins, two of his favorite foods 😉

Cinnamon Sweet Potato Bites

Flavor and nutrient packed kid-friendly snack or addition to any meal!
Ingredients
  • ¾ cup mashed sweet potato ( about 1 large sweet potato)
  • ¼ cup butter, melted
  • ½ cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup Greek or Skyr yogurt ( I used non-fat vanilla siggis yogurt)
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ cup quick oats
  • ½ cup whole wheat flour
  • ¼ cup flaxseed meal
  • mix ins: ½ cup dried fruit ( I used ¼ cup raisins, ¼ cup craisins) or ½ cup chocolate chips
Instructions
  1. Preheat oven to 375 degrees. Spray a mini muffin tin with cooking spray.
  2. In a large bowl add mashed sweet potato, melted butter, egg, maple syrup, yogurt, vanilla. Mix to combine.
  3. Add in baking soda, cinnamon, oats, whole wheat flour, flaxseed meal and mix to combine.
  4. Add in dried fruit and fold into batter.
  5. Add about 2 tablespoons of batter into each of the 24 mini muffin cups.
  6. Bake for 12 minutes. Let cool in pan for at least 5 minutes. Remove bites and let cool.
  7. Store in fridge for up to 1 week or in the freezer for 3-4 months.
