Looking for a new holiday cookie to make with your kids? Don’t look any further these Cranberry White Chocolate Oatmeal Cookies with Pecans are just what you need to make!

This holiday season is flying by! It might be because we are in the midst of renovating a kitchen in our new house, packing and moving all before Christmas. Oh yea and all while 6 months pregnant, I might be a bit crazy! Some how I did find sometime to whip up a new holiday cookie recipe to share this week as part of my December #cookingwithlittles campaign that I am hosting on my instagram account @LaurenSharifiRD !   The campaign is encouraging families to cook more with their littles this holiday in hopes to inspire them to cook more throughout the coming year (and years to come!). 

This recipe is for a Cranberry White Chocolate Oatmeal Cookie with Pecans I made with my son last week.  I love that it incorporates a bunch of holiday flavors and ingredients and is fairly easy to make with toddlers. My son enjoyed snacking on the mix ins while cooking and then eating the cookies straight from the oven with a big ol’ glass of milk! Let’s just say these cookies did not last very long in my house and I will be making another batch very soon to share with friends and family over the holidays.

Ingredients For Cranberry White Chocolate Oatmeal Cookies

  • all purpose flour
  • baking soda
  • cinnamon
  • salt
  • butter
  • brown sugar
  • old fashioned or instant oats
  • eggs
  • vanilla
  • dried cranberries
  • white chocolate chips
  • pecans

Ways Kids Can Help Make Cranberry White Chocolate Oatmeal Cookies

  • scoop/measure out flour, salt, baking soda, cinnamon, sugar, oats, cranberries, white chocolate chips, pecans
  • add ingredients to bowl
  • mix
  • chop pecans
  • scoop dough onto cookie sheet
  • pre-heat oven

It has been so fun seeing how much my sons cooking skills (primarily scooping, pouring, stirring) have improved over the past year. He still make a lot of mess but he is much stronger, has a longer attention span and his hand eye coordination has definitely improved! I have definitely found the more freedom I give him to do it his own way (with some guidance of course) the quicker he learns! 

Cranberry White Chocolate Oatmeal Cookies

Ingredients

  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter softened to room temperature
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1.5 cups old fashioned (or instant) oats
  • 1/2 cups dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup pecans chopped

Instructions

  • Preheat oven to 350 degrees. Line 2 large cookie sheets with parchment paper or a silpat mat.
  • In a large bowl, whisk together the flours, baking soda, cinnamon, and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the brown sugar until smooth. Mix in the egg and then the vanilla, scraping down the sides of the bowl as needed.
  • Slowly add the flour mixture to the wet ingredients and mix until just combined. Add the oats, dried cranberries, white chocolate chips and pecans and mix until fully combined.
  • Using a ~2 tablespoon cookie scoop, scoop the cookie dough and drop onto the prepared baking sheets. Very gently press down with your hand to flatten each ball of cookie dough slightly.
  • Bake for 12 minutes.Let cool for 5-10 minutes then place on cooling rack.
