Natural Baby FoodDr. Sonali Ruder, The Foodie Physician, has done it again! Remember back in the winter when I reviewed her Natural Pregnancy Cookbook? Well this time she has come out with a cookbook that is all about preparing foods for babies. I have to say she has the best timing! I found her Natural Pregnancy cookbook helpful during pregnancy and soon enough I will be using her Natural Baby Food cookbook to help prepare foods for my little one!

Sonali’s cookbook not only provides recipes for each stage of feeding but also meal plans, nutrition information and tips on how to safely feed your baby. Being a dietitian you may think I know exactly what a baby needs to eat, but I’ll admit I don’t.  This book is full of helpful information and will help make the transition from breastfeeding to eating solids a breeze. Let’s just say this book will be my bible in a couple months!

Well, maybe I am already digging in…

I decided to whip up a batch of her Banana Date Oat Muffins because they looked and sounded so good! I found it in the 12 month and up recipe section which is also full of other family friendly recipes.  What I loved about this recipe is that it contained no added sugars.  It’s naturally sweetened by the dates and bananas! I also loved that all the ingredients were already in my pantry. No trip to the store required! I added in walnuts for some crunch, and I think chocolate chips would be a lovely addition as well. I made them in a mini muffin tin, perfect size for snacking and a great size for kids to enjoy as well!

Banana Date Oat Muffins from Natural Baby Food - Book Review

Ingredients
  • ½ cup chopped dates (2½ ounces)
  • ⅓ cup hot water
  • ¾ cup all-purpose flour
  • ½ cup white whole wheat flour
  • ¾ cup quick-cooking oats (or old fashioned oats pulsed in food processor until coarsely ground)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1¼ cup mashed, ripe banana (about 3 bananas)
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • ¾ teaspoon vanilla extract
  • ½ cup walnuts, chopped (not in originally recipe)
Instructions
  1. Preheat oven to 375 degrees
  2. Place the dates and hot water in a bowl and let them soak for 10 minutes. Puree in a mini-food processor until a smooth paste forms.
  3. Whisk both types of flour, oats, baking powder, baking soda, salt, and cinnamon together in a large bowl.
  4. Mix the date paste, bananas, egg, milk, oil, and vanilla together in a another bowl. Add the dry ingredients to the bowl and stir everything together until just combined. Fold in chopped walnuts, if using.
  5. Spray a 24 cup mini muffin tin with cooking spray and spoon batter into wells. Bake in the oven for 12 minutes or until a toothpick inserted into the center comes out clean. Cool muffins on wire rack for 10 minutes before removing and serving.
