Olive Oil Honey Granola with Sliced Almonds
Granola is one of my favorite DIY foods. I rarely buy it because I usually have all the ingredients on hand! And if you ask me it tastes even better than the store bought stuff. The little guy has also recently become a granola fan on top of his yogurt or as part of a snack.  I definitely feel better about feeding him foods (like granola) when I know what’s in it.

A little while back I tried some granola at a local cafe and saw that it was made with olive oil and wasn’t too sure how I would like it since olive oil has a stronger flavor than other vegetable oils. But went for it and loved it! You couldn’t tell that it was made with olive oil but it did brighten up the cinnamon and toasted oat flavors in the granola.

So I thought why not update one of my favorite recipes, my Maple Cinnamon Granola by using Zucchi’s European Extra Virgin Olive Oil instead of canola oil. The result was delicious! I also decided to use honey instead of maple syrup, which helped create even larger granola clusters, which I love!

Olive Oil Honey Granola with Sliced Almonds

Use this Olive Oil Honey Granola with Slice Almonds to top your favorite yogurt, eat by the handful , or mix with some milk for breakfast or an afternoon snack.  The options are endless!

This is a great recipe to get your toddler involved in as well. Simply measure the ingredients out and have them pour each ingredient into a large bowl and then mix together with a spoon. Then you can have them help you spread out the mixture onto the pan.

Ingredients
  • 3 cups old fashioned oats
  • 1 cup sliced almonds
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • ⅓ cup European Olive Oil
  • ⅓ cup honey
Instructions
  1. Preheat oven to 300 degrees. Cover a large baking sheet (preferably one with sides) with parchment paper or a silpat mat.
  2. In a large bowl combine oats, sliced almonds, cinnamon and salt.
  3. In a small bowl combine olive oil, and honey.
  4. Add wet ingredients to dry ingredients and stir.
  5. Spread mixture onto large cookie sheet (preferably one with sides)
  6. Place in oven and bake for 15 minutes.
  7. Stir mixture then bake for another 10 minutes, until oats are golden brown.
  8. Remove granola from oven and let cool on pan to allow granola to harden and create clusters.
  9. Once harden remove from pan and store in air tight container.
