Pumpkin season is here and I officially whipped out my first can of pumpkin puree and have been cooking up a storm. This weekend included a batch of fluffy pumpkin pancakes to celebrate National Pancake Day, low glycemic pancakes for a recipe for work and the left overs went into making this yummy smoothie.
Smoothies are one of my favorite breakfasts on the go. They are also a great way to use up left over ingredients you have in the fridge and freezer including fruit, yogurt, milk etc. This week I used some of my pantry staples to create an ultimate pumpkin pie in a cup! I mean any excuse for dessert for breakfast is good with me.
The sweetness from the bananas helps round out the tart flavor from the yogurt while the pumpkin puree, pumpkin spice and cinnamon bring you the flavors of fall that you have been craving since last year.
