This Easy Skillet Lasagna is the perfect meal to get your family back to the dinner table.
Comfort food is what we are all craving these days. Especially the kind that is topped with all the gooey cheese! The first dish I think of is Lasagna. It is one of those meals that just give you one big huge and puts a smile on your face. So I decided to take one of my favorite family recipes a put a spin on it so you can get dinner on the table faster and get yours kids involved!
This Easy Skillet Lasagna is it! It takes under 30 minutes to prepare and cook and is easy enough for your kids to make with you. Added bonus, there will only be one dish to clean up when the meal is over! And I don’t know about you but my least favorite part of cooking is cleaning. These days I feel like i’m doing 10x as many dishes and am over it!
Ingredients You Need for this Skillet Lasagna
8 ounces of pasta ( I used farfella; other ideas: broken up lasagna noodles, penne) really any pasta you have in your pantry with work!
24 ounce jar of pasta sauce OR can of tomato sauce
1-1.5 cups water
1 cup diced vegetable ( mushroom, zucchini, summer squash or eggplant work well0
1 pound of ground meat (chicken, turkey, beef, pork or sausage) * if vegetarian, substitute with another 2 cups of vegetables
mozzarella cheese
ricotta cheese
parmesan cheese
herbs (dried or fresh if you have them!)
Ways Your Kids Can Help Cook this Skillet Lasagna
Add ground meat to pan. Practice stirring, browning meat.
Pour in sauce
Measure out and pour in pasta and water
Stir mixture together
Measure out, add in cheeses

1 cupdiced mushroom, zucchini, eggplant or summer squash
124 jarpasta sauce
8 ounces (about 4 cups)pasta ( I used farfella)
1-1.5 cupswater
1cupricotta cheese
1cupshredded mozzarella
1/4cupparmesan cheese
1-2tablespoonherbs (parsley, basil)optional for garnish
Instructions
In the large skillet on medium high heat add olive oil and then ground meat. Cook until no longer pink. Drain any fat. Add in vegetable and cook for another 3 minutes.
Add in pasta sauce, and pasta. Cover with enough water to cover pasta (about 1-1.5 cups). Bring to a boil.
Once liquid boils place lid on top of pasta and reduce heat to low. Cook for another 10-12 minutes or until pasta is almost cooked through (al dante) and liquid is almost gone.
Mix in 1/4 cup ricotta cheese and 1/4 cup mozzarella. Then top with remaining ricotta, mozzarella and parmesan cheese. Place lid back on top of skillet and cook for another 2-3 minutes, or until cheese has melted. Sprinkle with herbs and serve hot.
