This Sun-Dried Tomato and Pesto Mashed Chickpea Salad is an easy summer meal you can make ahead and enjoy multiple ways! 

Sun-Dried Tomato and Pesto Mashed Chickpea Salad

Mashed chickpeas take the place of shredded chicken or tuna in this dish for a quick make-ahead salad for lunch. The addition of Sabras Sun Dried Tomato Hummus brings in some moisture and a punch of flavor to the rather bland chickpeas. Sabra hummus is a delicious plant based protein that is not only delicious but brings the creamy texture we all love in the typical tuna or chicken salad. Sabra hummus comes in over a dozen flavors so you could easily swap out the Sun Dried Tomato flavor with another flavor that you like or have on hand.

This recipe is super easy to prepare, just break open a can of chickpea mash them then add in remaining ingredients, mix and boom lunch ready! This Sun dried Tomato and Pesto Mashed Chickpea Salad is great for dipping, on top of salad greens, or between two slices of bread for a sandwich.  Mixing it up from day to day keeps it interesting and fun and allows you to enjoy it how you like depending on how you are feeling that day. Because let’s be real some days you don’t want a salad and just want to eat your meal with your hands!

My favorite part of this recipe, other than it being quick,  is that no cooking is required! This is especially great for the summer when the last thing you want to do is put on the oven.

Kid friendly? Yes! Not only can you get your little one involved in preparing it you can also get them trying some new ingredients and flavors. My little one loves all things tomato, pesto, and hummus but sun-dried tomatoes are new for him. Getting him involved in the process of preparing the dish got him interested in trying it. He may not have been a super fan, but I’m hoping after a few exposures it becomes a new go-to lunch we can enjoy together.

A quick and versatile lunch idea, ready in only 5 minutes!
Ingredients
  • 1 can of chickpeas, drained
  • 4 tablespoon of Sabras Sun-Dried Tomato Hummus
  • 1 tablespoon pesto
  • ¼ cup chopped cherry tomatoes
  • salt/pepper to taste
Instructions
  1. In a medium size bowl add drained chickpeas. Mash with a fork.
  2. Add in hummus and pesto and mix to combine.
  3. Fold in cherry tomatoes.
  4. Add salt/pepper to taste.
  5. Serve on top of spinach salad, as a sandwich or with crackers and veggie sticks for dipping.
