I’m officially back after a little hiatus while I have been working on my new website! Needless to say this year has been a bit crazy between figuring out life with  two kids and working on building my business. Blogging has taken a back seat. What I enjoy most about my work is getting to share with you my most favorite recipes that make my life as a Mom that much easier. And this recipe for Instant Pot Salsa Chicken is just that!

This recipe calls for 2 ingredients! That’s it!

  • Chicken Thighs
  • Salsa

The secret is the chicken thighs. Yes thighs have more fat than chicken breast, so you can easily substitute. But the truth is more fat means more flavor and a more tender, juicy end product. Which makes this dish extra delicious!

Instant Pot Chicken Salsa

This Instant Pot Chicken Salsa is an easy recipe that goes great in just about any Mexican inspired dish!

Equipment

  • Pressure Cooker

Ingredients

  • 1.5 pounds chicken thighs
  • 1, 15.5 ounce can of salsa

Instructions

  • Add chicken thighs and salsa to instant pot. Mix to combine.
  • Place lid on instant pot and secure. Making sure dial is set to sealed.
  • Set to manual high for 5 minutes. Once done cooking let naturally release for 5 minutes then manually release the remaining pressure. Shred chicken with fork or the back of a spoon.

Notes

For leaner dish you can easily substitute chicken breast.
