Tomorrow I am officially 39 weeks and at this point baby #2 could make her arrival at just any day now! As much as I have enjoyed pregnancy these last few weeks have been a bit uncomfortable and I am just ready to finally meet our baby girl. Needless to say things may be a bit quiet on the blog for a few weeks until we are able to settle into some normalcy (whatever that might be!). But I will be sure to share some of our new life over on my instagram, if you are so interested in following along 🙂

For one last recipe before babies arrival I thought I would share one of my new favorite snacks, perfect for breast feeding mommas, formula feeding mommas, dads and kiddos! I may have called them No-Bake Lactation Bars but they are good for just anyone and everyone. My son and I have been enjoying them for snacks already!

When I had my son I was hungry 24/7 and eating with a baby in your hands while breast feeding can be a difficult task! I always tell new mommas to make food a priority because you need to eat. Not only are you healing but you may be helping to nourish your little one. Having quick make ahead snacks on hand really helped when I was breast feeding my son. I would stash a bunch in my night table for when I needed something to eat during early morning feedings.

For those of you who are not breast feeding or just need a quick snack for your kiddos these No-Bake Lactation Bars also work great. My hubby always jokes that if he eats them he will lactate (funny but not physically possible!), these bars are make with ingredients you would consume whether or not your lactating, so don’t fret! They are just delicious and packed with nutrition!

No-Bake Lactation Bars

Ingredients
  • 2 bananas
  • 2 cups of old fashioned oats
  • ½ cup flax seed meal
  • ¾ cup natural peanut butter
  • ⅓ cup honey
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • ½ cup chocolate chips
Instructions
  1. In a large food processor or high speed blender add all ingredients, except the chocolate chips.
  2. Pulse then blend, scraping as needed until the mixture is completely combined and smooth.
  3. Add in chocolate chips and mix in with a spoon or spatula.
  4. To an 8x8 baking dish, lined with parchment paper add the mixture. Press down to evenly fill the baking dish. Place in fridge for at least 30 minutes. Remove and cut into squares.
